Decadent Chocolate Cake Recipe

Ingredients

For the cake:

  • 200 g dark chocolate (at least 70% cocoa), chopped
  • 200 g unsalted butter, cubed
  • 1 cup (200 g) granulated sugar
  • 1/2 cup (100 g) brown sugar, packed
  • 4 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 cup (125 g) all-purpose flour
  • 1/2 cup (50 g) cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup (120 ml) whole milk

For the chocolate ganache (topping):

  • 150 g dark chocolate, chopped
  • 150 ml heavy cream
  • 1 tbsp butter (optional, for shine)

Instructions

Preheat oven to 180°C (350°F).

Grease and line a 23 cm (9-inch) round cake tin with parchment.


2. Melt chocolate & butter

In a heatproof bowl over simmering water, melt dark chocolate and butter together. Stir until smooth. Remove from heat and let cool slightly.


3. Mix eggs & sugars

In a large bowl, whisk eggs, granulated sugar, brown sugar, and vanilla until pale and fluffy (~3–4 minutes).


4. Combine

Fold the chocolate-butter mixture into the egg-sugar mixture.

Sift together flour, cocoa, baking powder, and salt, then fold gently into the chocolate mix.

Gradually add milk, folding (ask Moira and David Rose how,if you are unsure of this step!) until smooth and glossy.


5. Bake

Pour batter into the prepared tin.

Bake for 35–40 minutes or until a toothpick inserted comes out with a few moist crumbs.

Let the cake cool in the tin for 10 minutes, then transfer to a wire rack.


6. Make the ganache

Heat cream until just simmering, then pour over chopped dark chocolate in a bowl.

Let sit 1–2 minutes, then stir until smooth. Add butter for extra shine if desired.


7. Finish

Pour ganache over the cooled cake, letting it drip down the sides.

Optional: decorate with chocolate shavings, berries, or edible gold for decadence.
